Binh Lieu glass noodles (miến dong Bình Liêu) or Binh Lieu canna noodles are a traditional specialty product. They are made by the ethnic communities in Binh Lieu district, Quang Ninh province. The main materials of these noodles are the roots of the canna plant. They are grown on the hillsides, slash-and-burn fields, and terraced rice fields of Binh Lieu from March to November each year.

Binh Lieu glass noodles have received a geographical indication certificate by the Intellectual Property Office. Moreover, these noodles are popular with their distinctive delicious flavor and meet food safety and hygiene standards. They are also one of the few agricultural products in Quang Ninh to hold a geographical indication.

Canna plants in Binh Lieu are cultivated on upland fields, slash-and-burn plots, and terraced farms. Once the rice harvest finishes, local ethnic communities begin harvesting the canna roots. They are the main ingredients to produce Binh Lieu glass noodles.

Binh Lieu has favorable climate and soil conditions. Therefore, canna roots here have high quality, low fiber content, high starch yield, and a light fragrance. To ensure both quality and food safety, local farmers have been cultivating canna using traditional organic farming methods.

The production process of Binh Lieu canna starch noodles involves multiple steps. First, they clean the canna roots, grind them into starch, and filter the starch. Next, they steam the noodle sheets, dry them, and cutting them into strands. Binh Lieu glass noodles have a distinctive fragrant and mildly sweet flavor, as they are made entirely from pure canna roots, without additives or chemicals.

Binh Lieu glass noodles are especially notable for their light green color, which is the natural hue of pure canna starch after processing. This natural color sets these canna starch glass noodles apart from other similar products on the market.

Binh Lieu glass noodle is one of the 12 key OCOP (One commune One product) items of Quang Ninh province. Through trade promotion programs, Binh Lieu glass noodles have their presence on many clean agricultural stores and major commercial centers. The current selling price of Binh Lieu glass noodles ranges from 90,000 to 120,000 VND per kilogram.

√ For stir-frying: Soak noodles in hot water for at least 2 minutes to soften them, then stir-fry as you would with other ingredients. In addition, they can cook with vegetables, spices, meats, and seafood.
