In recent years, vermicelli production facilities have continuously improved product quality to meet market demand. Recently, Vietnamese dried rice vermicelli has received a 3-star OCOP rating under the ‘One Commune One Product’ program.
Gia Hoa 2 Hamlet is a vermicelli production village in Nhat Hoa Commune, Bac Son District, Lang Son Poovince. Mr. Duong Than Sang, a local resident, has more than 10 years of experience in producing dried rice vermicelli. Since 2005, his family had been making dried rice vermicelli mainly to serve local residents in the commune.
From 2016 onwards, recognizing the growing market demand, his family expanded production to increase income. As a result, they were able to supply Vietnamese dried rice vermicelli to customers both within and outside the province.
To produce dried rice noodles that meets quality standards, the selection of raw materials is a decisive factor. The rice used must be Bao Thai rice grown locally. Only plump, glossy grains are selected to ensure the vermicelli is chewy, soft, fragrant, and rich in flavor. The production process is meticulous: the rice is soaked for three nights, thoroughly washed, and then ground into flour.
The dough is kneaded and fed into a pressing machine to form strands, which are cut into lengths of 70–80 cm. The final step involves fermenting the vermicelli overnight to loosen the strands, followed by drying in a shaded, well-ventilated area.
To further improve product quality, the facility has proactively met the requirements for OCOP product development. Specifically, a 150-square-meter production workshop was built, including a processing area, roofed drying space, and drying racks.
The facility also invested over 200 million VND in machinery such as rice grinders, kneading machines, and pressing machines. In addition, it developed product packaging and labeling. Notably, Vietnamese dried rice vermicelli has received the certifications for food safety.
Thanks to a standardized process and traditional family know-how, the vermicelli strands become soft like fresh noodles and emit a natural rice aroma after cooking. Currently, the facility’s dried rice vermicelli is available not only within the province. Moreover, it has expanded to other provinces and cities such as Bac Giang, Hanoi, and Dong Nai. On average, the facility produces 6–8 tons of Vietnamese dried rice noodles annually.
Ms. To Xuan Quynh is a resident from Nhan Chinh Ward, Thanh Xuan District, Hanoi. She shared that during visits to Bac Son District to see relatives, she had the opportunity to enjoy dried rice vermicelli from Nhat Hoa Commune.
She was very impressed by its softness, chewiness, and distinctive rice fragrance. The vermicelli can be prepared into various dishes, and its long shelf life makes it especially convenient. As a result, she frequently orders it for personal use and as gifts for relatives.
Mr. Pham Ba Hanh is the Head of the Department of Agriculture and Environment of Bac Son District. He stated that in recent years, Mr. Sang’s family production facility has supplied dried rice vermicelli to markets both inside and outside the province.
In particular, thanks to proactive investment and continuous quality improvement, the product has recently received a 3-star OCOP rating. To date, it is the only dried rice vermicelli product in the district to achieve OCOP certification.
With these initial successes in product development and brand building, Mr. Sang’s family plans to further expand production in the coming time. They also intend to invest in drying machines to supply traditional dried rice vermicelli in larger quantities. In addition, they plan to actively participate in OCOP product exhibitions and promotional activities.
The facility also aims to access wider distribution channels, especially e-commerce platforms. These efforts will help increase income and create jobs for local workers. They will also contribute to elevating and expanding the market for traditional dried rice vermicelli.
