Since October lunar calendar, golden sunlight has spread across the mountains and terraced fields in Binh Lieu district. Local ethnic communities have become busy with Binh Lieu canna starch noodles (miến dong). Despite the busy work, the happiness is evident in the smiles of local farmers here. Especially, this local speciality is becoming increasingly well-known among customers.

The traditional craft of glass noodle making has existed here for generations. Binh Lieu canna starch noodles are made entirely from arrowroot (dong giềng) cultivated locally by the residents. They are famous for being chewy yet tender, naturally sweet, and retaining their texture without turning mushy when cooked.

In recent years, Binh Lieu canna starch noodles have become a standout OCOP (One Commune, One Product) product. They are now available many shops, supermarkets, and trade fairs both within and outside the province. As a result, they bring stable incomes and improved living standards for local families.

Huc Dong commune, which has the highest concentration of glass noodle producers in Binh Lieu district. From one end of the commune to the other, there are a lot of white strands of drying noodles. Also, the busy working spirit of local farmers brings a poetic beauty to this highland region.

Mr. La , Director of the Dinh Trung Cooperative, shared: “After Typhoon No. 3, our commune’s noodle production facilities suffered heavy losses in arrowroot harvests as well as damage to machinery and equipment. However, with the determination not to miss the Tet season, we quickly resumed production and increased manpower. At present, production is on track. On average, we produce about 200 kilograms of noodles per day. We expect to supply around 20 tons by Lunar New Year.”

Quang Ninh province has guided all Binh Lieu noodle producers to develop toward commercial production. Also, the province has encouraged these producers to apply science and technology into the production process. In the meanwhile, it is necessary to maintain traditional processing methods.

This approach preserves the authentic taste and quality of Binh Lieu canna starch noodles. Moreover, it enhances their aesthetic appeal, ensures food safety, and meets growing market demands. As a result, it contributes elevating Binh Lieu glass noodles into a high-value commodity.

Binh Lieu canna starch noodles were recognized by the Ministry of Industry and Trade as a typical rural industrial product of Northern Vietnam 2024. This recognition provides a great opportunity for us to boost competitiveness and further establish a good brand. Local producers are working to develop a sustainable raw material area, invest in technology, expand production, and research to produce higher-quality glass noodles.

Also, the province also has envisions turning glass noodle production villages into attractive cultural tourism destinations. This effort helps diversify tourism products, offering visitors a chance to not only enjoy pristine natural landscapes but also explore the rich cultural life of Binh Lieu’s ethnic minority communities.
