Dien Bien canna starch noodles are one of the famous local brands of Dien Bien province. Their materials are entirely from natural canna roots without any coloring agents. Therefore, they are completely safe for consumers’ health.

There are two types of Dien Bien canna starch noodles. The thin glass noodles have selling prices ranging from only 35,000 to 40,000 VND per kilogram. Meanwhile, the thick canna noodles are nearly twice as expensive. However, they are still in high demand among homemakers.

Recently, a special type of Dien Bien canna starch noodles has appeared on online markets. At first glance, it looks like pho noodles. However, upon inquiry, it turns out to be hand-cut canna noodles.

Ms. Hien, a merchant from Dien Bien who specializes in retail and wholesale of this noodle type. She shared that these thick canna noodles are handmade entirely from homegrown canna tubers. The process is completely manual and traditionally carried out by ethnic Thai villagers. Unlike other noodles that are cut thin, these noodles are thickly sliced, resembling pho, giving them a unique appearance.

Visually, the noodles have a clear black hue with a distinctive fragrance that reflects the mountainous region’s character. Made from canna starch, these thick noodles are soft yet chewy, do not fall apart, don’t stick together. Most importantly, they do not swell when cooked like other types of noodles.

Because they contain no sugar-based starch, these hand-cut thick noodles are especially suitable for people on special diets.

“Local families use Dien Bien canna starch noodles every day. They can cook them in many ways, such as in noodle soups, stir-fried dishes, salads, or hot pots. All preparations are delicious and work well,” Ms. Hien explained.

“They’re also very convenient to prepare. Just soak them in cold water for 10–15 minutes. Cooking time is only about 5–7 minutes, and they’re ready to eat.”
